Spice Blend Ingredients

Coriander, Cinnamon, Cumin, Cloves, Cardamon, Chilli, Ginger, Black Pepper and Onion.

Ethiopian Chicken Shopping List

1kg chicken thigh fillets
2 tablespoons vegetable oil
2 medium onions, chopped
3 cloves garlic, crushed
2 tablespoons tomato paste
4 tablespoons red wine
1 tablespoon lemon juice
200ml chicken stock
1 teaspoon salt
1 tablespoon chopped fresh coriander or parsley leaves

Ethiopian Chicken Recipe

Heat oil in a deep-sided pan or wok and sauté onion and garlic until glace looking.
Add Saucy Spice’s Ethiopian Chicken spice blend and stir until fragrant – about 30 seconds.
Add tomato paste, salt and red wine. Allow wine to bubble for 1 minute.
Then add chicken, chicken stock and lemon juice. Stir well and simmer on low heat with a lid for about 1 hour until chicken is tender.
Sprinkle with coriander or parsley and serve on a bed of rice or a bed of mashed parsnip.
